VEGETABLES
2qtGreen tomatoes; chopped
2qtRed tomatoes; chopped
1qtOnion; chopped
1qtRed bell pepper; chopped
1smCabbage
1qtGreen bell pepper; chopped
1/2cSalt
BRINE
2lbSugar
1qtCider vinegar
2tbMustard seed
1/2tsGround cloves
1tsCinnamon
1/2tsAllspice

Mix vegetables with 1/2 cup salt and let stand overnight.

Drain, then mix with brine ingredients. Bring to a boil, then turn heat down and cook very slowly until tender, about 1 to 1 1/2 hours. Pack into sterilized jars and seal.
